5 minute supper



Ever have one of those days?

You sleep in
You've not got time to wash your hair
You need petrol in the car
You're late for college
You forget your homework
You miss your afternoon appointment
You rip your tights
You do all your grocery shopping and get to the till and realise you haven't got your purse because you were so keen to use your new gorgeous bag that you forgot to swap ALL the contents from the old one to the new one?

Well this one's for you.

I generally have all of these 'staple' ingredients at home for an emergency supper.
 
 
Ingredients:

pesto* (a jar is fine but fresh is best) 
1 tomato
1 spring onion
2 sundried tomatoes (optional)
1 tbsp feta cheese
1 flat bread or tortilla bread **

Method: 
  • Grill one side of the flat bread (I like a crispy base)
  • Chop the tomato, spring onion and sundried tomato and mix in a bowl with a tiny bit of oil from the sundried tomatoes
  • Spread the pesto on the flat bread
  • Spoon the tomato mixture on top
  • Sprinkle with the crumbled feta
  • Season with S&P
  • Grill for a few mins

Voila ... a delicious pizza-like supper in no time.
 
 
 
*If you're a singleton like moi when you make the pesto fresh (ok some of you won't even attempt that so bought 'fresh' pesto is ok) separate it into four freezer bags and freeze.  Just add to pasta/bruschetta when needed.

** always keep a packet of these in the freezer !!  They can be used for so many things ... making emergency tortilla chips, using leftover chilli to make burritos, wraps for lunch ....
